As for the flavor, imagine boiling the sauce powder from Korean Chapagetti-style black bean noodles as though you were making regular instant ramen. Add a slight hint of gochujang and doenjang, and that gets you fairly close. The noodles are simply thick and pleasantly chewy.
The one consolation is that you can barely taste any spices.

Then again, compared with Korean food, known for its deep and layered flavors, expecting something extraordinary from a subtropical country may be asking too much.
It is probably best to see this simply as a popular everyday lunch among Taiwanese people and take it as a worthwhile cultural experience.
It is not inedible by any means.

Niu Zhenghao opens only during the midday lunch period, roughly from 11:30 a.m. to 2:00 p.m. It does not serve dinner, and the menu is compact.
The restaurant seems to follow a simple philosophy: work hard and serve customers efficiently during a short window, then enjoy the evening.

Look in during the lunch rush and one thing stands out: nearby office workers and residents greatly outnumber travelers. Many people arrive alone, eat in silence, and leave. Other tables exchange a few brief words before quickly finishing their meals.
Few people stop to take pictures.
